Traditional Cake Decorating

Cake decorating is great fun and easier than it looks. Learn all the basic traditional skills including pipe work, moulded flowers such as roses, orange blossoms etc. embroidery, lace, and extension work, or even piped flowers, from a seasoned Royal Easter Show competitor. Personalise your next special occasion be it a christening, anniversary, birthday or wedding, with your own decorated cake. This course is also ideal for those who are considering a career in cake decorating as well as the keen home decorator.
Each term will we follow a different schedule but flexibility is encouraged depending on individual experience.
Beginners welcome at any point during the year

Course Outline

Term 1
Session 1. Discussion of a basic kit, students are encouraged to bring any equipment materials they may already have. Niki will advise where to source any remaining equipment you may need. Approximate cost for complete beginners about $80
Session 2. Students will make royal icing in class and commence piping flower techniques.
Session 3. Using modelling paste practicing rose leaves and stems
Session 4. Moving onto rose petals and other smaller flowers such as jasmine and bouvardia
Session 5. Assembling a Dainty Bess Rose, making a mock orange blossom, piping teddies or rabbits
Session 6. Assembling Mock orange blossom and colour piped animals
Session 7. Review previous techniques and try colour piped flowers
Session 8. Decorating an Easter Egg

Term 2
Session 1. Rose bud on wire, leaves and hyacinths, discussion of basic kit for beginners
Session 2. Make Petals for a turn back rose and fully blown rose called Gypsophilia and the more dainty Solomon Seal
Session 3. Assemble roses and practice baby booties
Session 4. Frangiapani buds and daisy centres
Session 5. Baby face and hands, bib and the cake base cover board
Session 6. Baby body, pilow, blanket on an almond cake base
Session 7. Icing cakes, shell work, planning of side design
Session 8. Decorate cake in final lesson

Term 3.
Session 1. Cymbidium Orchid and rose centres, discussion of basic kit for beginners
Session 2. Extension work, new students will work on piped flowers
Session 3. Cecile Brunner and Dorothy Perkins roses, leaves on wires
Session 4. Flood work using Royal icing
Session 5. Painting flood work, sweet pea centres
Session 6. Sweet peas, pentas flowers and forget me nots
Session 7. Dianthus and cornflower centres
Session 8. Cornflowers, Carnations and primulas

Term 4.
Session 1. Flowering gums, gum nuts and leaves, discussion of basic kit for beginners
Session 2. Poinsettas, Flannel flower centre
Session 3. Assemble poinsetta and flannel flower
Session 4. Bottle brush, christmas bush, native violets, decorating the cake cover board
Session 5. Christmas bells, Wattle and leaves
Session 6. Almond cake, pink and brown Boronias
Session 7. Icing cake shell revision of techniques and planning Christmas cake design
Session 8. Decorate the cake with the work we have made in class
Finished cakes will go into a Christmas cake competition in Westfield Chatswood for one week.

Niki says "Please note these course outlines are completely flexible and are offered as a guideline only. I will move them around as required by my students and their needs. Beginners are welcome at any point as there is no requirement to start in the first term. I can also do lessons on boots, shoes, mould animals, christmas trees, santa claus and figurines etc. depending on individual requests. The object of my course is to have fun, no matter what skill level you are at. Everyone will work at their own pace in a relaxed and friendly environment"
